Ingredients
- 8 Ribs Beef I have them cut in half
- 1/2 cup sherry vinegar
- 1 bottle Ponzu
- 1/2 cup Mirin
- 1.8 quart Orange Juice
- 1 head garlic just crush the whole head and remove as much of the paper as possible
- salt

- Place Ribs in a large mixing bowl. Mix the reming ingredients and pour over the ribs. Cover and refrigerate for 24 hrs. 1/2 an hour before you start cooking remove ribs from fridge. Place on a sheet pan pat dry with a paper towel and season with salt and pepper.
- Pre-heat grill to high. Place the ribs meat side down and cook for 5-7 minutes. Repeat on all sides so that every side is equally browned. Turn of the two hand burners. Move the ribs to the left hand side and place meat side up (this is indirect cooking). Do not stack the ribs. Cook for 3 hours. Grills vary . You want to keep the temperature in the grill around 350- so adjust accordingly. Let the ribs rest for 30 mins before serving.
