Green Scallop Wrap with Bronx Hot Sauce Raita
This recipe just makes you feel good when you eat it. Loaded with healthy ingredients and a snap to make. The scallops were from the night before when we had friends over (grown ups only and up past 10!) , you can make them for the sandwich or as two birds with one stone situation. Either way I’m sure you’ll love the bright flavors
Green Chili Scallops
1 quart Sea Scallops
1 inch grated ginger
1 can Coconut Milk
3 tablespoons Green Thai Chili Pasta
2 tsp’s olive oil
In a large saute pan over medium high heat add oil and add chili paste and ginger, add coconut milk reduce heat to medium low and simmer for a couple of minutes. Add scallops and make sure to coat with sauce, all in the cooking process is about 5 mins – stir a couple of times and serve.
Bronx Hot Sauce Raita
This sauce is made by a childhood friend who works with over 30 community gardens in the Bronx to make this outstanding hot sauce . It is an amazing business and an equally amazing Hot sauce. It works on everything.
1/2 cup greek yogurt (I sued Fat Free)
3 radishes grated
2 tspns Bronx Hot Sauce
1 tsp’s lemon juice
Combine all of the ingredients and taste for salt
The Wrap
Use a large gorilla of your choice – in the middle lay down a strip of greens top with Scallops, diced tomatoes and The Bronx Sauce Raita. Roll you wrap up. Trim of the edges and cut into quarters serve on their sides like sushi rolls using the Raita as a dipping sauce
