Potato Hash with Pepperoncini
1 bag new potatoes cooked red potatoes cut into dice
3 Sliced onions
1 Red pepper diced
¼ Pepperoncini chopped
1 teaspoon brine
Parsley
Salt
Pepper
Olive oil
In a cast iron skillet over medium high heat add 1 tablespoon olive oil. Add onions and peppers. Cook for 5-10 minutes until brown and softened. Add the Potatoes , season generously with Salt & Pepper and cook until brown about another 10 minutes making. Add the pepperoncini , herbs and taste again for salt and pepper. Potatoes always need more salt than you think. This can be made ahead and reheated.
