This is a great go to when your running around juggling a hundred balls at once and want to put something tasty and healthy on the table. It takes the same amount of time as ordering a pizza- so skip that call and make this instead.

 

Two Chickens cut into 8 pieces each (breasts cut in half)

2 lbs new potatoes

1 bunch scallions

1 container cherry tomatoes

1/2 jar drained capers

2 sprigs rosemary

2 sprigs thyme

kosher salt

freshly ground black pepper

olive oil

 

Pre-heat oven to 450. On a large sheet pan or baking pan add chicken drizzle evenly with Olive Oil   and sprinkle liberally with salt and black pepper on both sides. Spread Tomatoes, Potatoes, Capers, Scallions, Thyme and Rosemary evenly on top of Chicken.

Put in oven and cook for 1 hr. When cooked, place chicken on a serving platter arrange scallions on top and pour pan juices over the top. Serve Potatoes on the side. A green salad rounds it out.
