This is a lovely dish that would make a great vegetarian entree with a loaf of crusty bread and a sliced Tomato salad ( I was a vegetarian for 6 years and remember feeling very limited) or a great side. It can easily be made gluten free and is a real crowd pleaser.
Ingredients
- 3 Bunches Broccoli Rabe Chopped
- 1 4 oz package goat cheese
- 1 cup sharp cheddar cheese
- 1 small onion sliced
- 1/4 tspn fresh nutmeg
- 2 tablespoons sour cream
- 1 tablespoon heavy cream this may seem decadent, but this small amount is not
- 1/2 teaspoon fresh ground black pepper
- 1/2 teaspoon kosher salt
- 1/2 cup panic bread crumbs if you are gluten free feel free to leave this out
- 1 tablespoon butter

- Pre-heat oven to 375.Heat a large pot of well salted water over high heat. Meanwhile chop the ends off of the Broccoli Rabe (the bottom inch) chop the rest. When the water is boiling add all of the Broccoli Rabe and let cook for 5 mins stirring occasionally. Remove the Broccoli Rabe to a colander placed over a large bowl.Let the Broccoli Rabe drain for a couple of minutes.
- Discard the liquid from the large bowl, add the Broccoli Rabe from the colander, the onions, cheeses, nutmeg, sour cream, cream,salt & pepper and combine well. When every is well mixed pour it into a baking dish and sprinkle with the bread crumbs. Dollop on top with the butter and bake for 35 Minutes.
