Ingredients
- 1 1/2 cups soy sauce I use reduced sodium
- 3 tablespoons white vinegar
- 2 teaspoons hot sauce
- 1 lemon juice & rinds
- 4 lbs chicken wings I use 1 lb per person
- 1 bottle ginger beer
- 2 tsp's hot sauce adjust according to your preference
- 1 cup sweet chili sauce
- 1 cup greek yogurt
- 1 tablespoon minced scallions
- 1 pinch salt
- 1 tspn lemon juice
- 1/2 tspn cumin

Wings
- Combine soy sauce, vinegar, hot sauce, lemon, lemon rinds and wings in a large bowl. Marinate for at least an hour and up to 4. The marinade will not cover the wings so you will have to toss the wings periodically.
- To make the glaze mix the bottle of ginger beer, hot sauce and sweet chili sauce in a small sauce pan over medium low heat and cook until reduced in half about 20 mins.
- Pre-heat oven to 425. Place a rack onto of a baking sheet. Cook the wings for 20 mins take out and brush glaze on both sides. Put the wings back into the oven . This is an odd step but, blast the glaze on high for about 5 mins or until it looks like jam. Remove wings brush with thickened glaze and serve.
Dipping Sauce
- Mix yogurt, scallions, pinch salt , lemon juice and cumin. Refrigerate if not serving right away.
