This is a an homage to Risotto with out all of the work, hence the name. Cheater’s Risotto 2 1/2 cups chicken stock 1 cup orzo 1/2 cup mushrooms sliced 1/4 cup frozen peas 2 large handfuls kale 1/2 cup parmesan cheese Salt Pepper In a medium sauce pan add stock bring to a boil and add orzo.
